Born in Naples, our sourdough culture began with a natural fermentation of local fruits and ancient grains, a way to spark life that goes back millenia. Once stable, we transitioned it to a pure flour and water system, and has been maintained that way ever since.
For 24 hours, we let it ferment, mature, and breathe. Then, by Neapolitan craft, we cook each pizza for 90 seconds at 450c in our oven. It builds a cornicione with attitude: a crust that is light and airy inside, but blistered and bold on the outside. We are slow where it counts, and fast where it matters.
Each batch follows the same timeless ritual by respecting nature’s pace, and letting restraint lead the way.
We choose only the finest flour from our trusted mill in Campania that we have used for over a decade. With a few tweaks, it ensures a soft yet strong structure that can hold its purity in the Asian climate.
The perfect pH of water guides our fermentation, so the dough makes its magic in harmony.
Sea salt harvested from the Mediterranean sea brings depth and ensures a tight gluten structure with balanced fermentation control.
The final ingredient is not something you can buy — it’s our yeast, and intuition. Years of experience guide every knead, fold and proof ensuring each dough is alive with flavour.
